I’m a Mexican food tragic, since visiting Austin,TX, several times and being exposed to their DIVINE Mexican and Tex/Mex food. So I wanted to share with you some of the easiest Mexican recipes ever so you can enjoy a slice of southern hospitality at your house.

McCormick Grill Mates have two Tex-Mex style sauces perfect for your Mexican food feast. The following recipes use either Brown Sugar Bourbon BBQ Sauce or Vintage Smokehouse BBQ Sauce – Viva la Mexico!

Easiest Mexican Recipes : Chicken Quesadillas

Prep time: 10 minutes (+1 hour marinate) : Cook time: 20 minutes : Serves 4

Ingredients:

  • 12 chicken thigh fillets, diced
  • 3/4 cup McCormick Grill Mates Vintage Smokehouse BBQ Sauce
  • 1 cup grated parmesan cheese
  • 2 cups grated Mexican cheese blend
  • 1 egg
  • 1 tsp McCormick Ground Coriander
  • 1 tsp McCormick Ground Cumin
  • 1 tsp McCormick Smoked Paprika
  • 1 bunch chopped coriander
  • ½ bunch sliced spring onions
  • ½ tsp McCormick Chilli Flakes
  • McCormick Sea Salt and Black peppercorns, ground
  • 8 mini wraps/tortillas

Method:

  1. Marinate the chicken in McCormick Grill Mates Vintage Smokehouse BBQ Sauce for 1 hour.
  2. Preheat your BBQ or chargrill plate to medium heat. Cook the chicken for five to ten minutes until cooked through. Set aside.
  3. Place the cooked chicken in a large bowl, add all other ingredients and stir well to combine.
  4. On a clean surface, lay out four tortillas. Add enough chicken mixture to cover each tortilla to about 2-4cm thickness. Place a tortilla on top.
  5. Preheat a non-stick frying pan to a medium heat.
  6. Spray with olive oil and place a quesadilla in the pan. Allow to gently toast until golden and crunchy. Spray tortilla with olive oil spray before turning with a spatula.
  7. Toast other side until golden and crunchy. Gently remove from pan with a spatula and place onto a chopping board. Repeat process for all quesadillas and then slice all four into wedges and serve.

Chicken Quesadillas

Easiest Mexican Recipes : Mexican BBQ Corn Cobs

Prep time: 10 minutes : Cook time: 20 minutes : Serves 6

Ingredients:

  • 6 corn cobs, husks removed
  • 100g Parmesan, Romano or Manchego cheese, grated
  • Lime wedges, coriander, chilli & spring onions, to garnish

BBQ Butter:

  • 250g salted butter, softened
  • ¼ tsp dried McCormick chilli flakes
  • 2 tbsp parsley, chopped
  • 4 tbsp McCormick Grill Mates Vintage Smokehouse BBQ Sauce

Method:

  1. Turn on your hooded BBQ to medium heat.
  2. Make the BBQ butter; In a bowl add the softened butter, and all other ingredients. Mix to combine thoroughly. Set aside.
  3. When BBQ is preheated, cook corn cobs 15-20 minutes with lid on, turning occasionally until tender and charred.
  4. Remove corn from the BBQ and place on a serving plate. Smear with the BBQ butter and sprinkle with cheese and scatter coriander, spring onion and chopped chilli.
  5. Serve with lime wedges.

Tip: Reserve extra butter and can be used to make BBQ bread on toasted crusty bread.

Mexican BBQ Corn Cobs

Easiest Mexican Recipe : Pulled Chicken Tacos

Prep time: 20 minutes : Cook time: Nil : Serves 4

  •  Ingredients:
  • 2 cups shredded roast chicken meat, warmed
  • ½ cup McCormick Grill Mates Vintage Smokehouse BBQ sauce, warmed
  • 8 fresh tacos (we used enchiladas), warmed

Coriander dressing:

  • 2 bunches coriander
  • 2 garlic cloves
  • McCormick Sea Salt and Black peppercorns, ground
  • 3 tbsp lime juice
  • ½ cup olive oil
  • ½ tsp McCormick Ground Cumin 

Avocado salsa:

  • 3 avocados, diced
  • 2 garlic cloves, finely chopped
  • 1 red onion, finely diced
  • Juice of 2 limes
  • 1 bunch coriander, chopped
  • 3 tomatoes, diced
  • 1 tbsp brown sugar
  • 1 tsp McCormick Ground Cumin
  • McCormick Sea Salt and Black peppercorns, ground

Method:

  1. Dressing: roughly pulse all ingredients in a food processor until smooth. Set aside.
  2. Salsa: In a bowl, gently mix all ingredients together. Set aside.
  3. Coat shredded chicken in McCormick Grill Mates Vintage Smokehouse BBQ sauce and set aside. Keep warm
  4. Place warm tacos on a plate and assemble with chicken, salsa and dressing, fold or roll up and serve.

Pulled Chicken Tacos

Easiest Mexican Recipes : New Orleans Barbeque Prawns

Prep time: 10 minutes (+2 hours chill) : Cook time: 35 minutes : Serves 4

Ingredients:

  • 1kg raw prawns, peeled and deveined
  • 100g butter, melted
  • 4 cloves garlic, crushed
  • 6 tbsp olive oil
  • 4 tbsp Worcestershire sauce
  • 4 tbsp lemon juice
  • ½ tsp McCormick Chilli Flakes
  • ¼ cup McCormick Grill Mates Vintage Smokehouse BBQ Sauce
  • 2 tsp McCormick Smoked Paprika
  • 2 tsp McCormick Dried Oregano
  • McCormick Sea Salt and Black peppercorns, ground

Method:

  1. Melt butter and oil in a medium saucepan with the garlic.
  2. Add all other ingredients and simmer on a low- medium heat for 10-15 minutes. Allow to cool.
  3. Add prawns to sauce, and marinate for a couple of hours in fridge.
  4. Preheat oven 180 °C
  5. Place prawns & sauce in a heat proof oven dish and bake for 15-20 mins.
  6. Serve with crusty bread.

New Orleans BBQ Prawns

Easiest Mexican Recipes : Barbecue Baked Beans

Prep time: 10 minutes : Cook time: 2 hours : Serves 4- 6

Ingredients:

  • 10 slices bacon, diced
  • 1 brown onion, diced
  • 2 cups McCormick Grill Mates Hot n Spicy BBQ sauce
  • 1/2 cup brown sugar
  • 1 cup beef stock
  • 2-3 tablespoons molasses
  • 1 tablespoon Keen’s Mustard Powder
  • 2 teaspoons salt flakes
  • Ground pepper to taste
  • Pinch ground cloves
  • 4 tins butter beans (or cannelloni beans)
  • 1 tin crushed tomatoes
  • 1 cup pulled Pork (optional)
  • Fresh parsley, for garnish

Method:

  1. Preheat oven 150 degrees Celsius
  2. Heat bacon in oven proof pot (Dutch oven) on medium to low heat for 4 to 5 mins till fat renders out of bacon
  3. Add onion and cook stirring 3-4 minutes.
  4. Add all other ingredients and stir to combine.
  5. Place lid on pot or cover with foil. Place on middle rack of oven.
  6. Cook for approx 2 hours or until sauce is thick and fragrant.
  7. Allow to cool for 10 minutes before serving.
  8. Garnish with fresh parsley and serve with crusty bread.

YUM. Even a novice like me can prepare and cook the easiest Mexican recipes EVER and they’ll be DELICIOUS.
